
Strawberry Shot Cake
Ingredients(Serves 4):
- 2 cups fresh strawberries, finely chopped
- 1 cup crumbled vanilla sponge
- 1 cup whipped cream
- ½ cup fresh strawberry puree
- ½ cup strawberry juice
- 4 tsp sugar
- 1 tsp lemon juice
Method
- Mix crumbled sponge and strawberry juice in a bowl.
- In another bowl, mix chopped strawberries, 1 tsp sugar and lemon juice.
- In another bowl, add whipped cream, strawberry puree and 3 tsp sugar. Beat well to prepare the strawberry mousse.
- In a shot glass, assemble 3 layers by scooping in a spoon each of crumbled sponge mixture, followed by chopped strawberries mixture and then by mousse.
- Garnish with a few strawberry pieces and a whisk of whipped cream.
