
Lebanese Parsley Bites
Ingredients(Serves 4):
Dough
- 1 cup bulgur wheat, drained
- 1 cup fresh mint leaves, chopped
- ½ cup pine nuts
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 tsp each of black pepper and cumin, ground
- 1 tsp cayenne pepper
- 1 tsp paprika
- Salt, to taste
Lebanese 7 Spice:
- 4 tbsp black pepper
- 4 tbsp cumin
- ½ cup paprika
- 2 tbsp ground coriander
- 2 tbsp cloves
- 2 cinnamon
- 2 cardamom
Stuffing
- 1 cup parsley, chopped
- ½ cup mixed red, yellow and green bell-peppers, chopped
- 2 tbsp red chilli powder
- 2 tbsp cottage cheese (paneer), grated
- Salt and pepper to taste
Method
- Grind ingredients of Lebanese 7 spice.
- Mix ingredients of dough in a food processor until smooth. Keep aside for an hour at room temperature.
- Separately mix ingredients of stuffing. Add 3 tbsp of Lebanese 7 spice mixture.
- Roll the dough in small shapes and fill with one tablespoon of stuffing. Place them on baking sheet.
- Preheat oven to 176°C. Bake them for fifteen minutes, until golden brown and crispy.
- Serve the bites with tahini.
