Watermelon Nutmeg Kheer Shots

Ingredients (Serves 4):

  • 4 cups milk
  • 2 cups sugar
  • 1 cup watermelon, seedless and diced
  • ½ cup watermelon scoops
  • 3 tbsp rice, boiled
  • 2 tbsp nutmeg powder
  • 2 tbsp pistachios, chopped
  • 2 tbsp almonds (badam), chopped
  • ½ tsp saffron strands (kesar)

Method

  • Add milk, sugar and rice in a pan. Boil till the mixture thickens. Stir if necessary.
  • Add nutmeg powder and saffron strands. Mix well.
  • Cool this mixture to room temperature.
  • Separately blend diced watermelon to form a smooth pulp.
  • Add this pulp to the milk mixture. Mix well.
  • Add watermelon scoops and the remaining ingredients. Stir well and serve chilled.
